Dry roast the foxtail millet : Place a clean, heavy-bottomed pan or kadai over medium-low heat. Add the foxtail millet and dry roast it for about 3–4 minutes, stirring continuously so that the grains roast evenly and do not burn. The millet should become lightly golden and give off a mild, nutty aroma. Once roasted, transfer it to a plate and keep it aside.
Prepare the tempering : Heat 1–2 teaspoons of oil in the same pan over medium heat. Once the oil is hot, add the mustard seeds. Allow them to splutter completely before proceeding to the next step.
Add the spices and aromatics : Add the urad dal, curry leaves, and finely chopped green chillies to the tempering. Sauté for about 30 seconds, stirring gently, until the urad dal turns light golden and the curry leaves become fragrant. Take care not to burn the dal or chillies.
Sauté the onion : Add the chopped onion to the pan and mix well with the tempering. Cook over medium heat for about 2–3 minutes, stirring occasionally, until the onion becomes soft and translucent. There is no need to brown the onion heavily.
Add water and seasoning : Pour 2 cups of water into the pan carefully, as it may splutter when added to the hot mixture. Add the required amount of salt and stir everything together. Increase the heat slightly and bring the water to a gentle boil.
Add the roasted millet : Once the water starts boiling, add the roasted foxtail millet gradually. Stir well to ensure that the millet is evenly distributed and does not form lumps. Mix thoroughly so that the millet absorbs the flavors from the tempering and onions.
Cook the millet : Reduce the heat to low and cover the pan with a lid. Allow the millet to cook for approximately 10–12 minutes. Avoid opening the lid frequently, as the steam helps cook the millet evenly. Cook until the water is completely absorbed and the millet grains become tender.
Rest and fluff the millet : Turn off the heat once the millet is cooked. Keep it covered and allow it to rest for 2–3 minutes. Then remove the lid and gently fluff the millet using a fork. This helps separate the grains without making them mushy.
Garnish and serve : Garnish with freshly chopped coriander leaves. Serve the foxtail millet hot as a wholesome breakfast or light meal. It can be enjoyed on its own or served with coconut chutney, vegetable kurma, sambar, or yogurt.

Chef's Tip
Always rinse millets thoroughly before cooking to remove any dust or debris. Soaking for 15–20 minutes reduces cooking time and greatly improves digestibility.
